Chocolate, Pistachio Toffee Apples

This is a very simple recipe for a classic toffee apple with a grown up twist.  It is also 'rustically beautiful' - a very achievable, impressive look!  Suitable for the kiddies too of course but please be careful if making with children - the sugar/toffee gets very very very hot and would give terrible burns.

So, here's what you need-

  • 8 fresh apples - we used dessert apples
  • 400g golden caster sugar
  • 1 tsp vinegar
  • 4 tbsp golden syrup
  • 200g good dark chocolate
  • 150g chopped pistachios
  • Twigs or lollypop sticks
  • Sugar thermometer

And here's how to do it-

Place the apples in a large bowl, cover with boiling water for a minute and then rinse. This will remove the waxy coating and help the caramel to stick. Dry thoroughly and push your twig or lolly stick into the stalk end of each apple.

Lay out a sheet of baking paper and place the apples on this, close to your hob. Also place the dish of chopped pistachios nearby for dipping later.

Tip the sugar into a pan along with 100ml water and cook over a medium heat. Leave for 5 mins until the sugar dissolves, then stir in the vinegar and syrup. Set a sugar thermometer in the pan and boil to 150C or 'hard crack' stage. If you don’t have a thermometer you can test the toffee by pouring a little into a bowl of cold water. It should harden instantly and, when removed, be brittle and easy to break. If you can still squish the toffee, continue to boil it.

Working quickly and carefully, dip and twist each apple in the hot toffee until covered, let any excess drip away, then place on the baking paper to set. You may have to heat the toffee a little if the temperature drops and it starts to feel thick and viscous.

Leave the toffee apples to cool for half an hour. 

Melt the chocolate in a basin over a pan of simmering water.  Dip the toffee apples about half way up in the chocolate, twisting to get an even coverage.  Being careful of falling blobs (which must be eaten straight away) roll the apples in the pistachios (you may need to throw some at it too).

Leave to set for at least 1/2 an hour somewhere cool.  Enjoy within 2 days.
